Yoshi Hachi, Okinawan food and Health

One of our favorite places to eat in Okinawa was Yoshi's.
A traditional sushi joint with the most delicious and fresh sushi EVER!
We have officially become sushi snobs.  Since moving to Japan, I realize we will never have sushi like that again.  And at the cheap prices that we are used to!
However, when we first got to Japan, we were so excited about the food!  I mean...Asian food is a favorite!  But we quickly realized that our expectations were WAY off.  Of course, the sushi was the best thing in terms of a traditional Japanese dish;  But there were a lot of things that we just couldn't get into.


 Take off your shoes when you get in, and sit on the tatami mats on the floor!

Soba noodles, Udon, Yakinuki (although we did like Yakitori)...there were many strange brothy soups.  One in particular, which I'm not sure of the name...with a true pig's food floating in it.  No thank you!!!!  They love their pork.

But the people of the Ryukyu Islands have the highest life expectancy than anyone in the world!  Why?!
For one...the average American serving size is about triple what we would get in Okinawa.  They eat very little carbs and processed foods.  In fact, many toxic ingredients and pesticides that we find in various processed foods in the US are banned in Japan.  This was a comfort when shopping at the local markets because I usually had NO IDEA what I was getting!  haha! 
Also, we would see some old ass people just doing their thing in town...walking/hobbling around or riding around on these little motorized carts, even riding bicycles or scooters.  They are very active and it continues into their old age.
Another thing and probably the most important part of their health, which they take very seriously...is maintaining a calm, positive mind. In all aspects of life.  Before work everyday the employees will stretch, yoga and meditate before beginning their work day.  When a woman becomes pregnant, she stops doing anything with any amount of stress and focuses entirely on the health of not only her body, but also her mind.

A few months after we arrived on Okinawa, I was leaving a store (it was on base, but there were many Japanese locals who worked on Kadena), and this kind Japanese lady was at the cash register.  In front of me was a woman with a tiny baby...the woman was ooh-ing and aaaah-ing at the baby.  Ironically, that very day I had found out that we were pregnant with little Luke, our first baby.
So I got up to the register, and the lady commented to me about how precious babies were (in her broken English.)
I was too excited to hold back, and told her that I had just found out I was pregnant.  Her eyes filled with tears, she literally walked around the counter and held my shoulders and told me 'Oh, you going to be good mommy.  If you happy, the baby happy.  Love is in you.'
OHMYGOD...I'm pretty sure I was changed. And my respect for the Japanese people and their cultural difference shifted.  It brought to my attention how they approach life and how different it is from myself and anyone else I know.  Over the next 3 years, many of these moments presented themselves...I feel so full that I was able to see and learn first hand from such a truly wonderful culture.

Chicken Pot Pie




I made a delicious chicken pot pie the other day.  Full of veggies and chicken inside of a delicious Pillsbury crust.  This was SO easy to make!  I must say, it wasn't like my Mama's...but I'll be working on that.  Need to start practicing the family dressing recipe for Thanksgiving!

Eagerly awake, map open, ready to embark on a new day, discover something new, awaken the senses..starting with breakfast.


 One of my favorite things in life…waking up in a new foreign city, new air, new light, new day, the smells wafting through the air from a nice corner bakery or café, cute tables line the streets, introduction to new flavors and obsessions, marveling at the morning, mapping out the adventures to come.  Europe in all its charming essence has the perfect scenery to accomplish all of this, a sense of wonder, and charm.  It never fails…


 I just found a sweet little bakery around the corner from us.  It’s so tiny, and very easy to pass by.  The name on the window is ‘Boulangerie Couques’  …quite French, nowhere close to Japanese.  But they have amazing crusty French bread, and delish pastries, sweet buns and fruit tarts.  It takes all of my self control not to stop in everyday...not only to buy everything,  just to smell the beautiful aroma of freshly baking bread.

Bringin the South to Southeast Asia

 We finally got a charcoal grill!  The first things we grilled, burgers...up next BBQ Chicken.  If anyone knows of any great marinade recipes or how to grill delicious veggies, please let me know!  We are going grill crazy.

Gyoza

Gyoza is SO good.  These little dumplings filled with something magical.  We ate at a place known for their gyoza... ready in minutes and served with a soy peanut thai sauce which was amazing. The restaurant is called Osaka Ohsho.


Adam also got this crazy bowl of egg and soup that he ate all of!  I think it was similar to an egg drop soup with rice inside.  Either way, everything was delicious and it came in these sets which included pieces of chicken, miso soup and other stuff that we didn't realize we were getting.
Overall, pleased and full.  Come visit us, and we can take you here.  :)

Blue Seal

The big ice cream shop here on the island.  They are known for their ice cream crepe cones.  Yes...exactly how it sounds.
It was a hot summer day, we checked out NEOS and then decided to cool off a bit.


Adam was the photographer here...The ice cream was delicious.  We stuck with our traditional favorites...instead of getting the sugar cane cookie flavor, pistachio, or coconut cream pop.  Maybe next time when we are feeling crazy!

Gordie's Hamburger Joint

There is nothing like a delicious grilled burger after a long day at the beach.  Sun-kissed and hungry!
Adam and I have seriously been craving some good sloppy grilled cheeseburgers..The messier the better.  I read about an awesome hole in the wall place called Gordie's, so we decided to try it out.  It had been a long day at the beach, we left the dog at home to get some much needed zzz's, and we and our appetites headed for the door.
We walked in and all the seating was a different theme.  We chose the middle school desk.  Adam looked so huge sitting in it. 

We ordered two cheeseburger sets.  They brought out miso soup as an appetizer...?  It was a bit too hot outside for hot soup, though it was good...Adam slurped his right up, and I think he finished mine too.


When the burgers came out, there was a homemade ketchup on them...like tasty tomato puree.  SO GOOD.  They were dripping with delicious magic juices...and the buns were homemade!



It was so delicious...loved the old bottles everywhere.  It seriously reminded me of a place you would find in rural America; Except the waitress doesn't speak english...
 We will be back Gordie's...

Sunday Morning breakfast

Adam can make a phenomenal breakfast!  And every Sunday morning it's become a tradition...a delicious (usually cheesy) breakfast...
This was last week:
ciabatta bread rolls, peppered bacon, scrambled egg with green onion and melted cheddar cheese.

Of course, a big hot cup o' joe.

Raspberry delight

I have this obsession with raspberries lately...Almost every day I have a raspberry smoothie consisting of frozen raspberries, plain yogurt, a splash of milk, a few spoonfuls of sugar, a touch of vanilla extract....yum!  It kills my ice cream cravings and its healthy!
